Good food, gently done
Let’s make it
Bring a large pan of water to the boil. Add the penne and cook for the time on its pack, until tender with a little bite.
Meanwhile, finely slice the garlic. Wash the spinach unless its pack says ready to eat. Finely grate the zest from the half lemon, then squeeze its juice.
Warm the olive oil in a large frying pan over a low heat. Add the garlic and cook gently for 1–2 minutes, stirring, without letting it brown.
Add the spinach and stir until wilted and hot. Reserve a mug of pasta water, then drain the penne.
Add the pasta, lemon zest and juice to the frying pan. Toss with a splash of reserved water to coat, adding a little more water if needed. Season with the salt and pepper and serve straight away.
